Every cleaning follows a multi-point food-safety checklist covering kitchens, prep-areas, dining rooms, restrooms and high-touch surfaces. We degrease, scrub, sanitize and mop everything.
Yes, and quite literally. There is no reason whatsoever that your hourly wage staff should be deep-cleaning during operating business hours. That is as inefficient as it is cost-prohibitive; and in more ways than you can ever imagine. I only clean overnight so as to not disrupt any daily business.
